After a long day at work, the last thing I want to be doing is cooking a healthy dinner! I'll admit, I'm not the one who does much of the cooking in my house (baking is more my thing), but these week night meals from TJs are totally fool proof, delicious and healthy!

The pre-made food items at Trader Joe's are underrated. These stuffed peppers are always so fresh and great! Throw them in the oven and you've got yourself a full, healthy meal.
